Scientists develop hybrid “beef rice” as future meat alternative

Scientists from South Korea’s Yonsei University have invented what they believe to be a sustainable, high-protein food in the form of “beef rice”, made by growing cow cells in grains of rice.

Tinged a pale pink from the cell culturing process, the hybrid food contains more protein and fat than standard rice while having a low carbon footprint, leading its creators to see it as a potential future meat alternative.

The beef rice was made by inserting muscle and fat stem cells from cows into grains of rice and leaving them to grow in a Petri dish.

Because the rice grains are porous and have a rich internal structure, the cells can grow there in a similar way to how they would within an animal. A coating of gelatine – in this case, fish-derived – further helps the cells to attach to the rice.

Although beef rice might sound like a form of genetically modified food, there is no altering of DNA in the plants or animals. Instead, this process constitutes a type of cell-cultured or lab-grown meat but with the beef grown inside rice.

In a paper published in the journal Matter, the Yonsei University researchers explain that their process is similar to that used to make a product already sold in Singapore – a cultured meat grown in soy-based textured vegetable protein (TVP).

Soy and nuts are the first foods that have been used for animal cell culturing, they say, but their usefulness is limited because they are common allergens and do not have as much cell-holding potential as rice.

The nutritional gains for their beef rice are also currently small, but the researchers from Yonsei University’s Department of Chemical and Biomolecular Engineering say that with further optimisation, more cells and therefore more protein could be packed in.

The hybrid rice contains 3890 milligrams of protein and 150 milligrams of fat per 100 grams – just 310 milligrams more protein and 10 milligrams more fat than standard rice.

“Although hybrid rice grains still have a lower protein content than beef, advances in technology that can improve the cell capacity of rice grains will undoubtedly improve the nutritional content of hybrid rice,” the researchers said in their paper.

The scientists also believe the product could be inexpensively commercialised and tout the short time frame required to boost nutrition through culturing.

Whereas beef production usually takes one to three years and rice 95 to 250 days, they say their cell culturing process took less than 10 days.

“Imagine obtaining all the nutrients we need from cell-cultured protein rice,” said researcher Sohyeon Park. “I see a world of possibilities for this grain-based hybrid food. It could one day serve as food relief for famine, military ration or even space food.”

If commercialised, the hybrid grain is expected to have a low carbon footprint, similar to growing standard rice, because there would be no need to farm lots of animals. While the stem cells used for the process are extracted from live animals, they can proliferate indefinitely and don’t require animal slaughter.

An obstacle for some may be the taste; the cell culturing process slightly changes the texture and smell of the rice, making it more firm and brittle and introducing odour compounds related to beef, almonds, cream, butter and coconut oil.

However, lead researcher Jinkee Hong told the Guardian that the foodstuff tastes “pleasant and novel”.

The team is now planning to continue their research and work to boost the nutritional value of the hybrid rice by stimulating more cell growth.

Lab-grown and cultivated meats have been a subject of great interest and investment since 2013 when the world’s first lab-grown burger was eaten live at a press conference.

However, scaling up production, clearing regulatory hurdles and creating an appealing taste and texture have proven a challenge, and there are few examples on sale anywhere in the world.

In the meantime, speculative designers have explored the issue. Leyu Li recently created three conceptual products that, similar to beef rice, combine lab-grown meat with vegetables, calling them Broccopork, Mushchicken and Peaf.

Simplicity and suggestion are the foundation of a successful Haiku, a form of traditional Japanese poetry that strips away all but the essential words and uses them to beautifully convey a single moment in time. In the familiar 5-7-5 pattern of seventeen syllables that make up a Haiku, kigo (seasonal words) and kireji (cutting words) anchor the poem in a specific season, allowing the reader to engage their imagination to recreate a scenario the writer is retelling. Haiku often celebrates the beauty and impermanence of the natural world and invites readers to find profound meaning in nature and everyday experiences.

In architecture, this same principle has been adopted by a number of architects, finding a shared ethos with haiku in pursuit of simplicity, emotional resonance and the power of suggestion. Architects who embrace this ‘haiku approach’ often favor natural materials to celebrate the living world and play with light and shadow to connect occupants with the natural rhythms of the day while creating fluid spatial transitions that suggest rather than dictate how spaces should be used or lived in. It is a minimalist style that is deeply emotive.

The goal of haiku principles in architecture is to build unique relationships between a building and its users that encourage a connection to the environment and each other. Just as haiku strips away all but the essential words to convey a moment, architectural haiku seeks to distill design to its most fundamental aspects — form, light, material and space — creating places that invite visitors to fill the space with their interpretations and emotions.

The white stucco, green foliage, warm tones and light woodwork of Casa Sexta, designed by All Arquitectura, serve as the perfect pallet to celebrate nature’s beauty and impermanence. An idea that is so fundamental in Haiku. The design of Casa Sexta suggests rather than dictates how spaces are to be inhabited. By developing the program across three levels and orienting the walls at a 45º angle to capture sunlight through ten patios, the structure of Casa Sexta encourages a fluid movement between the various spaces.

Each room benefits from natural lighting and ventilation that promote a harmonious flow. Allowing the inhabitants of the home to define their own experiences while always being connected to the natural rhythms of the day. The presence of a black acacia tree at the heart of the project deepens this connection. The living centerpiece links the various spaces of the house while also physically documenting the passage of time.

As suggested by its name, Panorama Penthouse was designed to amplify the relationship between the internal living space and the external skyline views. Opting for an open floor plan, the home provides unobstructed and simply breathtaking 180-degree panoramic views of the seaside and the city center. There are free-standing oak volumes that are built to house private areas such as the primary bathroom, office space and bedrooms in the evening. These structures add to the fluidity of the space while ensuring comfortable functionality.

The penthouse’s material palette was thoughtfully selected to reflect the visas beyond, echoing the haiku’s integration with nature. The light oak wood mirrors the dunes and beaches, while the muted grey cabinetry in the kitchen and dining room are intended to echo the distant city skyline. The design follows the capacity of a haiku to capture and convey the essence of a moment or scene – in this instance, the ever-changing colors of the skies, tides and urban landscape.

On a site with deep community ties, OG House and architect Omar Gandhi reflect the principle of haiku in the building by grounding in a specific moment and setting. The transformation of the ground floor of the standout structure into a community studio dedicated to local projects and for local residents takes into consideration the site’s history as well as its present needs, creating a space that is deeply embedded in its community.

The choice of local materials, such as eastern white cedar, buff-colored brick, and white oak paneling, speaks to the project’s commitment to material honesty and the celebration of natural textures — a core of haiku poetry. The weathered cedar façade that blends with the neighborhood’s textures acknowledges the city’s architectural heritage and exemplifies a design that is both of and for its environment.

Within the space, the repeated use of gentle, rounded corners and the incorporation of organic shapes in the stairwells and handrails demonstrate an attention to form that is evocative of haiku elegance and subtlety. These design elements gently guide movement and focus within the house, inviting exploration and reflection.

Through a series of deliberate spatial manipulations and material choices, Empire Loft is full of moments of elegance and unexpectedness. The dramatic cutaway of the second floor to introduce a suspended bridge is a bold spatial move that disrupts the traditional apartment layout, making the sinuous dark stone spiral staircase and the bridge focal points of movement and interaction, embodying the principle of simplicity in form yet complexity in experience that is fundamental in the creation of a haiku.

Mirrored elements throughout the apartment create illusions with the depth and boundary, inviting occupants and guests to reinterpret the apartment’s dimensions. Incorporating a recording studio wrapped in corrugated felt illustrates an understanding of sensory restraint—capturing haiku’s minimalist ethos. This thoughtful detail underlines the importance of not only visual comfort but also the management of all sensory experiences when striving for harmonious architecture.

Each design decision, from the layout to the material finishes, is part of a design strategy that aims to provide memorable moments of ordinary residential experience, elevating the every day through craftsmanship and creativity.

Għallis exhibition suggests alternative to Malta’s “hyper-development”

Valentino Architects and curator Ann Dingli have presented a proposal to retrofit a historic fortification at the Venice Architecture Biennale to suggest alternative methods of conservation in the face of Malta’s rapid development.

Curated by Dingli, the small-scale exhibition was part of the Time Space Existence showcase and featured an abstracted plan to retrofit the 17th-century watchtower on the north-eastern shore of Malta.

“The Għallis watchtower in isolation is not remarkably significant – it’s been vacant for years,” Dingli told Dezeen. “But it belongs to a network of micro-fortifications that were built along the edge of the islands in the 17th century and tell a part of the islands’ wider military story.”

“Today the tower is a marker along the coast and not much more,” she continued. “The point of the exhibition is to re-charge its significance by introducing new usability and graduating it from just a visual landmark to a habitable space.”

With its proposal, the team suggests changing the use of the building to create a multi-use structure that can be utilised in numerous ways.

“The design reverses the exclusive nature of the tower – conceived as a fortress designed to keep people out – to an inclusive building that invites people in,” explained Valentino Architects.

“Its programme is flexible, adapting to three permutations that allow for varying degrees of private use and public access.”

The tower was showcased at the biennale to draw attention to a wider issue facing Malta – the commercialisation of its historic buildings.

The team aimed to demonstrate that historic buildings could be converted into useable structures rather than being restored as empty monuments.

“Heritage architecture in Malta has a strong focus on preservation of building fabric and less so on functional innovation,” said Dingli.

“This means heritage buildings very often serve one programme – usually as museums of themselves or as institutional buildings – and as a result become inaccessible or redundant to everyday use,” she continued.

“This design moves away from heritage as a product and towards heritage as useful space.”

The team hopes that the exhibition will draw attention to the rapid development of Malta, which it says is happening at the expense of the country’s existing buildings.

“The islands are on a seemingly unstoppable trajectory of hyper-development,” explained Dingli. “Malta is the most densely populated country in the EU, and one of the most densely populated countries in the world.”

“Its built environment hasn’t met this intensity with the right blend of retrofit and newbuild development – the former exists in extreme scarcity, despite a huge stock of existing building fabric crying out to be re-used in smarter ways,” she continued.

Although the exhibition focuses on a historic fortification, the team believes that prioritising reuse over rebuilding should be implemented across the country.

“The argument for conservation needs to be extended to any form of building stock, not just heritage buildings,” explained Valentino Architects.

“Demolishing existing buildings to make way for new ones is almost never sustainable,” they continued. “When there is no alternative but to remove a building, we need to advocate for dismantling as opposed to demolishing.”

“Materials such as Malta’s local yellow limestone – which has traditionally carved out the architectural identity of our island – is a finite resource that needs to be both protected and used,” they added.

Alongside the Għallis exhibition, the Time Space Existence show presented work by architects, designers and artists from 52 different countries in venues across the city. These included a tea house made from food waste and a concrete emergency housing prototype developed by the Norman Foster Foundation and Holcim.

MIT engineers create battery alternative using cement and carbon black

Scientists at the Massachusetts Institute of Technology have developed a low-cost energy storage system that could be integrated into roads and building foundations to facilitate the renewable energy transition.

The research team has created a supercapacitor – a device that works like a rechargeable battery – using cement, water and carbon black, a fine black powder primarily formed of pure carbon.

The breakthrough could pave the way for energy storage to be embedded into concrete, creating the potential for roads and buildings that charge electric devices.

Unlike batteries, which rely on materials in limited supply such as lithium, the technology could be produced cheaply using materials that are readily available, according to the researchers.

They describe cement and carbon black as “two of humanity’s most ubiquitous materials”.

“You have the most-used manmade material in the world, cement, combined with carbon black, which is a well-known historical material – the Dead Sea Scrolls were written with it,” said MIT professor Admir Masic.

The research team included Masic and fellow MIT professors Franz-Josef Ulm and Yang-Shao Horn, with postdoctoral researchers Nicolas Chanut, Damian Stefaniuk and Yunguang Zhu at MIT and James Weaver at Harvard’s Wyss Institute.

“Huge need for big energy storage”

They believe the technology could accelerate a global shift to renewable energy.

Solar, wind and tidal power are all produced at variable times, which often don’t correspond with peak electricity demand.  Large-scale energy storage is necessary to take advantage of these sources but is too expensive to realise using traditional batteries.

“There is a huge need for big energy storage,” said Ulm. “That’s where our technology is extremely promising because cement is ubiquitous.”

The team proved the concept works by creating a set of button-sized supercapacitors, equivalent to one-volt batteries, which were used to power an LED light.

They are now developing a 45-cubic-metre version to show the technology can be scaled up.

Calculations suggest a supercapacitor of this size could store around 10 kilowatt-hours of energy, which would be enough to meet the daily electricity usage of a typical household.

This means that a supercapacitor could potentially be incorporated into the concrete foundation of a house for little to no additional cost.

“You can go from one-millimetre-thick electrodes to one-metre-thick electrodes, and by doing so basically you can scale the energy storage capacity from lighting an LED for a few seconds to powering a whole house,” Ulm said.

The researchers suggest that embedding the technology into a concrete road could make it possible to charge electric cars while they are travelling across it, using similar technology to that used in wireless phone chargers.

Battery-powered versions of this system are already being trialled across Europe.

Carbon black key to “fascinating” composite

Supercapacitors work by storing electrical energy between two electrically conductive plates. They are able to deliver charge much more rapidly than batteries but most do not offer as much energy storage.

The amount of energy they are able to store depends on the total surface area of the two plates, which are separated by a thin insulation layer.

The version developed here has an extremely high internal surface area, which greatly improves its effectiveness. This is due to the chemical makeup of the material formed when carbon black is introduced to a concrete mixture and left to cure.

“The material is fascinating,” said Masic. “The carbon black is self-assembling into a connected conductive wire.”

According to Masic, the amount of carbon black needed is very small – as little as three per cent.

The more is added, the greater the storage capacity of the supercapacitor. But this also reduces the structural strength of the concrete, which could be a problem in load-bearing applications.

The “sweet spot” is believed to be around 10 per cent.

The composite material could also be utilised within a heating system, the team suggested. Full details of their findings are due to be published in an upcoming edition of science journal PNAS.

Other attempts at creating large-scale, low-cost energy storage systems include Polar Night Energy’s “sand battery”, which is already servicing around 10,000 people in the Finnish town of Kankaanpää.

A leather alternative made from beer brewing waste

Spotted: Spent grain from brewing practices is usually burned, sent to landfill, made into gas, or used as cheap feed for livestock. All of these are low-value enterprises. So, instead, one startup, Arda Biomaterials, is utilising this cheap waste product to create leather, without needing to farm animals for their hides. 

Arda Biomaterials is currently working with breweries from South London’s ‘Bermondsey Beer Mile’, which was once the leather tanning district of the City of London, to make its leather alternative. 

The material is produced by taking the grain that has had its sugar removed for brewing purposes, also known as brewer’s spent grain (BSG). This grain is rich in protein and fibre, which makes it an ideal blueprint for an alternative to conventional leather. It is chemically treated and manipulated in order to create a material that resembles conventional animal leather, a process developed by the company’s founders Edward TJ Mitchell and Brett Cotton. 

Arda Biomaterials has just received a £1.1 million (around €1.3 million) investment led by Clean Growth Fund, a UK cleantech venture capital fund. Now, the company is hoping to both reach a completed product and subsequently start launching its material in a limited capacity next year, and scale the business from there.

A plastic alternative made from onions

Spotted: By now, we are all familiar with the environmental impacts of single-use plastic. Made from fossil fuels, these plastics don’t really break down, but they do break up – into microplastics and chemicals that are harmful to all life. And each year, half of all plastic we produce is used once and thrown away.

Textile designer Renuka Ramanujam has now developed a plastic packaging alternative made from onion skins, after testing an onion-based fabric dye. She has dubbed the new material Huid (Dutch for ‘onion skin’).  

Although the proprietary process has not been fully revealed, it involves boiling ground, waste onion skins, then binding them together with a natural casein-based adhesive. The result is a material that is strong and waterproof. And, onion skin contains anti-bacterial and antioxidant compounds that slow down the oxygenation process that causes food to go off, making the finished product especially useful for food packaging. 

Ramanujam has recently won a Scottish Edge award of £10,000 (around €11,300) and a £5,000 (around €5,600) Young Innovator award to help develop the material. She is also looking for investment to fund a prototype 3D modelling process for the material. 

Ramanujam is not alone in using food waste to develop a circular plastic substitute. Similarly innovative products Springwise has spotted include a helmet made from waste scallop shells, and food packaging made from surplus grain.

Seven alternative bricks made of reclaimed waste and biomaterials

Expanded cork, construction waste and human urine feature in this roundup of brick alternatives, designed to reduce the masonry unit’s embodied carbon footprint.

After concrete and steel, brick has become the latest focus for architects, designers and material researchers hoping to slash the emissions associated with building materials.

That’s because bricks are generally made from clay – a finite resource that needs to be mined and shipped around the globe – as well as being fired in fossil fuel-powered kilns at temperatures of more than 1,000 degrees Celsius, often for several days.

This energy-intensive process generates not just a large amount of greenhouse gas emissions but also carbon monoxide and other dangerous air pollutants, especially in South Asia where kilns are often still powered by coal.

To tackle these problems, brick manufacturers and researchers are increasingly looking at how to make use of local waste materials to create masonry units, as well as reverting to traditional methods of sun-drying to cut out the need for firing.

Read on for seven examples of brick alternatives, ranging from experimental student projects to the Dezeen Award-winning K-Briq, which is set to go into mass production this spring.


Cork blocks by MPH Architects, Bartlett School of Architecture, University of Bath, Amorim UK and Ty-Mawr

Interlocking blocks of expanded cork are stacked like Lego blocks without the need for mortar or glue in this construction system, which was used to build the Stirling Prize-nominated Cork House.

This means the bricks can be used to create structures that are easily disassembled, recycled and reused, as well as having the potential to be carbon negative due to the large amounts of CO2 sequestered by the cork oaks, from which the material is sourced.

London firm MPH Architects has been working on the system in collaboration with various research institutes since 2014, and is now hoping to develop it into a self-build cork construction kit.

K-Briq by Kenoteq

At 90 per cent, the K-Briq offers “the highest recycled content of any brick” currently on the market, according to manufacturer Kenoteq, leading the brick to be crowned sustainable design of the year at the 2022 Dezeen Awards.

As the brick doesn’t need to be fired, it requires 90 per cent less energy in its production than a traditional brick and ultimately emits less than a tenth of the carbon emissions in its manufacture.

Out of the brick alternatives on this list, K-Briq is the closest to commercialisation. But its prolonged curing process has previously posed issues for quick-turnaround projects, with South African studio Counterspace forced to abandon plans to integrate K-Briqs into the 2021 Serpentine Pavilion due to long lead times.

To form the new wing of the Design Museum Gent, architecture studios Carmody Groarke and TRANS Architectuur Stedenbouw worked with materials researchers to turn local municipal waste such as demolition concrete and glass into an unfired low-carbon brick.

This carries one-third of the embodied carbon as a typical Belgian clay brick and is produced in a simple process that is being opened up to the public through workshops, encouraging local residents to have a hand in the construction of their museum.

“The bricks will be manufactured on a brownfield site in Ghent using a clean simple production process, which could easily be replicated in other urban settings,” said Carmody Groarke. “There are no resultant emissions, by-products or waste.”

The resulting building blocks are up to 20 times more porous than common bricks, promoting biodiversity by making space for plants and insects in our cities, the researchers claim.

Mycelium Brick by The Living

One of the first experiments in using mycelium at an architectural scale saw New York studio The Living construct 2014’s MoMA PS1 pavilion using bricks that were grown from the root-like structure of fungi.

Based on a process pioneered by biomaterials company Ecovative, this involved placing waste corn stalks from agriculture inside a mould and encouraging the mycelium to grow around this aggregate, effectively cementing the brick.

Bio-bricks from human urine by University of Cape Town

Urine bio-bricks by Suzanne Lambert

In this experimental project from University of Cape Town researcher Suzanne Lambert, human urine, sand and bacteria are combined in brick-shaped moulds.

The bacteria triggers a chemical reaction that breaks down the urea in the urine while producing calcium carbonate – the main component of cement – in much the same process that seashells are formed.

“The longer you allow the little bacteria to make the cement, the stronger the product is going to be,” Lambert told Dezeen.

Alternative Systems opens at the Design Museum

An exhibition highlighting London-based designer Bethany Williams’ waste-combating, social-driven vision for the fashion industry has opened at the Design Museum.

Exhibited in the atrium of London’s Design Museum, Bethany Williams: Alternative Systems is a celebration of Williams’ work which explores and responds to social issues through the use of community-led enrichment initiatives.

A number of key works by the designer were exhibited across the four walls of the atrium’s balcony gallery, which is free to entry.

Mannequins are displayed among textiles samples, photography and raw waste materials in efforts to highlight the studio’s commitment to sustainable fashion.

“I decided to organise the display thematically rather than by collection,” said Design Museum’s head of curatorial and interpretation Priya Khanchandani.

“It opens with a section about the studio specifically and then there’s a part about creative process, intellectual references and the way in which they propose alternative infrastructures of working, followed by a section about reuse and another about community collaborations,” she told Dezeen.

“Bethany’s work not only tackles the question of the environmental impact of design, but it also has an amazing social purpose.”

Williams is a fashion designer, humanitarian and artist. She graduated from Brighton University with a degree in Critical Fine Art before receiving a master’s from the London College of Fashion in Menswear.

She launched her namesake brand in 2017 and has strived to spotlight and respond to social and environmental issues, her works see her partnering with local grassroots programs and manufacturing collections using waste materials.

A section of the display exhibits Willliams’ work as part of the Emergency Designer Network. The initiative is a collaboration between herself and designers Phoebe English, Cozette McCreery and Holly Fulton.

The group of creatives, with their textile manufacturing knowledge and teams of volunteers, produced 12,000 scrubs, 100,000 masks and 4,000 gowns for frontline healthcare workers during the peak of the coronavirus pandemic.

Waste from packaging tape sourced from Rimini, Italy was handwoven and constructed into functional items and garments as part of Williams’s Autumn Winter 2018 collection, which was on display.

“I felt it was very important to show not just the finished garments, which you would see in a retail fashion context; being a museum display I wanted to add other layers of information,” explained Khanchandani.

“There are process materials like drawings and sketches, and also source material,” said Khanchandani. “For instance, a jacket made of waste newspaper is shown alongside some of the waste material, the Liverpool Echo, which is dangling next to the garment.”

“You’re able to see the journey of the objects from inception, to finished product.”

Each season, the fashion studio collaborates with different local charities and grassroots programs and donates a percentage of its profits to its causes.

“With our work, we hope to continue to reach new audiences, encourage inclusivity and positive change for the fashion industry,” said Williams. “The Design Museum continues to be aligned with this via the exhibitions curated, including their Waste Age exhibition, which we featured in last year.”

The opening of Bethany Williams: Alternative Systems was timed to coincide with Williams’ Autumn Winter 2022 collection, titled The Hands that Heal Us, which was presented at the museum.

The collection included a cactus leather jacket, and garments made from recycled and organic-based denim with detachable metal hardware that aid the recycling process at the end of its life.

In 2016, Williams graduated from London College of Fashion and showed her MA graduate collection in the university’s show as part of London Fashion Week.

Last year’s Waste Age exhibition at the Design Museum, which featured Williams’ work, explored how design has contributed to the increasing throwaway culture and how people can create an alternative circular economy that doesn’t exploit the planet.

British-made Ecovado offers low-impact alternative to avocado

Central Saint Martins graduate Arina Shokouhi has invented an avocado alternative called Ecovado, which is meant to wean people off the resource-intensive imported fruit.

The Ecovado contains a pale green, creamy foodstuff made from a combination of ingredients local to its country and packaged in a fake avocado skin fashioned from wax.

Shokouhi, who is a recent graduate of London school Central Saint Martins’ masters in Material Futures, created the product to help people reduce the amount of avocado they eat while still indulging their cravings for its flesh.

“The avocado has become a modern-day cultural icon synonymous with hipster cafes and trendy Instagram posts,” said Shokouhi.

“However, avocado production is energy-intensive and resource-intensive: each avocado requires 320 litres of water to grow and harvest internationally.”

“Avocados are one of the most unsustainable crops to export because of their delicate, easy-to-bruise nature, and the plantation-style monoculture farms required to meet the global demand for avocados are driving the deforestation of some of the most diverse landscapes in the world.”

To come up with the Evocado recipe, Shokouhi worked with food scientist Jack Wallman from the University of Nottingham’s Food Innovation Centre. He helped her identify the chemical and molecular composition of avocados and showed her how to go about finding suitable replacements.

The Ecovado she made for her final-year project is designed for the British market and employs primarily broad beans, hazelnut, apple and rapeseed oil.

Shokouhi says approximating the flavour and texture of avocado with only local, natural, low-impact ingredients was a huge challenge.

“The flavour of avocado is quite subtle and, overall, is most often described as ‘creamy’,” Shokouhi told Dezeen. “On the other hand, broad beans can contain quite a lot of bitter compounds called tannins and can have a beany flavour caused by lipoxygenase.”

“To reduce the bitterness, we reduced the amount of broad beans in the recipe,” she continued. “The flavour of avocado has been described as ‘nutty’. So we used creamed hazelnuts which would bring a good amount of fat, adding to the creaminess.”

Sometimes seemingly ideal substitute ingredients – such as olive oil, which is similar to avocado fat – could not be used because they came from too far away.

“Instead, cold-pressed rapeseed oil was selected due to the wide availability of UK-grown products and the similarity of its fatty acid profile to avocado,” said Shokouhi.

Shokouhi’s finessed recipe is encased in a realistic faux avocado skin made from wax and coloured with food colouring. The packaging is biodegradable and compostable, and can also be upcycled into a candle should the consumer choose to get crafty.

The Ecovado also contains what looks like an avocado stone. Shokouhi experimented with many options for this, including a wooden ball, which was ruled out for being a waste of material, and a recycled-paper “seed ball” that could be thrown into the garden to sprout wildflowers.

However, she decided the most “uncomplicated” option was best and so the Ecovado features a whole nut – either a walnut, chestnut or hazelnut – at its centre.

Other innovations in food design that have come from design students include Holly Grounds’ dissolvable flavoured ramen packaging that wraps around the noodles and Annie Larkins’ unusually shaped alternative to chicken eggs.

Laneway Homes as a Housing Alternative

The woes of housing shortages plaguing many large cities across the world are well-known and manifold; from a lack of affordable housing driving lower-income families out of cities, to skyrocketing house prices making it even harder for younger people to enter the housing market. But, while drastic rezoning laws to encourage denser housing seem still far off in the future, municipal authorities and architects are finding ways around the problem.

One alternative in vogue has been the concept of ‘gentle density’ — an increase in housing density that has little impact on the outward appearance or character of a neighborhood — and laneway houses have been a driving force behind the trend. Architects are demonstrating that, though tucked behind principal residences, laneway houses need not compromise comfort or privacy. Their designs suggest that one remedy to the housing shortage might be awaiting in our own backyard.

Full House by Leckie Studio Architecture + Design, Vancouver, Canada

The added density provided by this two-story house and laneway addition in Vancouver seeks to push beyond the affordability calculus by rethinking how a multigenerational family can co-exist in a suburb of single-family homes. A hidden one-bedroom, secondary residence provides additional living space in the backyard and matches the sleek and understated design of its bigger sibling.

Central to this aim are the Marcel Duchamp-inspired doors that allow the family to reconfigure the house’s layout as it sees fit. By hinging between two possible frames, the 5-bedroom main home can be split into two discrete dwellings of either 3 and 2 bedrooms or 4 and 1 bedrooms. When comes time for the perennial family gathering, the units can be reopened as one large multi-generational house.

Laneway House by 9point9 Architects, Townsville, Australia

Rather than keeping all three bedrooms and two bathrooms compact into one large house, this bungalow in Townsville, Australia, unfurls its rooms on the full length of its lot. Two guest rooms and a living room receive lighting through the front yard, while the offshoot master bedroom reaches the other end of the lot and is connected to the main building by a translucent walkway that opens onto the central courtyard.

This expansive layout allows the house to breathe both literally and figuratively. The main wing and the master bedroom have direct access to the courtyard, enabling full, unencumbered ventilation of the house. Likewise, the central courtyard gives the house a sense of spaciousness that a larger home on the same lot could not provide.

This single family home and an expanded laneway studio in suburban Vancouver uses Japanese-inspired landscaping to create calm spaces within narrow confines. The corrugated steel-clad studio has both landscaping on the roof and a green wall facing the house, reclaiming the green space lost by the densified back yard. The wall also provides a lush and peaceful background for weekend family meals or a late-afternoon summer nap. 

Laneway Wall Garden House by Donaghy & Dimond Architects, Dublin, Ireland

This 19th Century Dublin house renovation now boasts an expanded kitchen that protrudes into the cobblestone courtyard garden and an additional bedroom in a separate structure by the laneway. A lean-to zinc covered roof acts as a mediator between the two new spaces, serving as both a rainwater collector and connective tissue. The concrete walls and timber structure have been left unpainted, with the expectation that lichen and moss will one day overtake them, hence mitigating the urban footprint of the new construction.

McIlwrick Residences by B.E. Architecture, Melbourne, Australia 

Three townhouses are clustered within this single residential block in Windsor, Melbourne. Small courtyards intertwine with cobblestone alleyways, offering intimate and flexible spaces for the multigenerational family that occupies the residences. The flush struck brickwork and deep-set windows are a contemporary re-iteration of early Victorian Australian architecture thus fitting snuggly in a neighborhood mostly occupied by residences from that era — an attribute that has earned it the label of “quiet integration”, which the architects gave to their design.

Riverdale Townhomes by Studio JCI, Toronto, Canada

The Riverdale Townhouse development gently increases the number of residences on this quiet residential street in Riverdale, Toronto. The bright and spacious five two-bedroom units make for ideal housing for young professionals and new families. Floor-to-ceiling windows and internal voids maximize the interior’s exposure to sunlight, ensuring that the units are generously lit. The dark brick columns of the front-facing façade pay respect to the Victorian-era architecture of its neighbors, while partitioning the modernist charcoal-colored exterior into more palatable doses.

R Micro Housing by Simple Projects Architecture, Surabaya, Indonesia

The R Micro Housing complex in the suburbs of Surabaya, Indonesia squeezes five separate, affordable units onto a 39 feet by 98 feet strip of land. The residences might be glued together, but they don’t feel cramped: the complex aligns wall-length skylights above each unit’s staircase, enabling natural sunlight to brighten the ground floor.

The minimalist, monochromatic ‘quintal-plex’ stands out among the neighborhood’s classical hip-roofed terracotta-tiled residences – as if wanting to show off how densification can be a pathway to affordability.
